In a pan with a drizzle of olive oil, sauté the onion and garlic for a few minutes.

Once the sauté is done, add handfuls of spinach in parts until it completely reduces.

Meanwhile, defrost the salmon in the microwave (in my case, they were two frozen fillets; if you have fresh ones, skip this step).

Add the chopped salmon to the pan and stir. Let it cook for a few more minutes.

With the heat off, add the crumbled feta cheese and stir so it melts with the heat of the pan.

Finally, add raisins to taste. I like to add a lot. Stir and it's ready!
