Ingredients

about 40 minutes
2 people
  1. 10Raw King prawns (as many as you prefer)
  2. Halfa white onion finely diced
  3. Halfa large red capsicum pepper finely diced
  4. 1courgette finely diced
  5. 4garlic cloves peeled and chopped
  6. 1 teaspoondried chilli flakes (add more or less depending on how hot you prefer it)
  7. Tablespoonfresh chopped parsley
  8. 50 mlwhite wine
  9. 220 gmready made linguine
  10. Grated zest of one lemon
  11. Juice of one lemon
  12. Salt and pepper to taste
  13. Tenderstem broccoli (small packet)

Steps

about 40 minutes
  1. 1

    Cook the pasta in boiling salted water according to the packet instructions.
    Blanche the broccoli in boiling water for one minute.

  2. 2

    Prepare all the other ingredients ready to cook

  3. 3

    Heat a drizzle of olive oil in a thick bottomed pan (I use my wok)

  4. 4

    Add garlic, onions, peppers, chilli flakes and stir fry for two minutes.

  5. 5

    Add courgette and fry for a further minute. Season to taste.

  6. 6

    Add the prawns and lemon zest, continue to fry until prawns turn pink. Add the wine and broccoli, continue cooking.

  7. 7

    Add the pasta and toss the ingredients together, still over the heat.
    Add lemon juice and chopped parsley,
    Transfer to serving bowls ready to eat.

  8. 8

    Serve as it is or with warm garlic bread.
