This recipe is from a friend who is a cook and always gives me ideas for quick and easy meals.

Gather all the ingredients. Finely chop the onion, garlic, and bell pepper. In a large deep skillet, heat the olive oil and sauté the ground meat. Gradually add the onion, garlic, bell pepper, tomato puree, salt, pepper, and hot pasta water. Simmer until the liquid is absorbed. (You can either cook the penne separately and reserve some pasta water, or add the uncooked penne to the skillet and cook everything together.)

Meanwhile, in a bowl, combine the Greek yogurt, eggs, cheese, and spices. Mix well. Grease the bottom of a baking dish with a little margarine or butter.

Layer the meat and penne mixture in the baking dish. Pour the béchamel sauce over the top and use a spatula to spread it evenly. Garnish with a little extra cheese and sesame seeds (some people also add feta). Bake in a preheated oven at 375°F (190°C) for 40 minutes. Enjoy!
