Khichudi is my favourite one pot comfort food but to make it healthy I swapped rice with Pearl Millet and it became not only healthy but mouthwatering too

In a pan add moong dal, on low flame roast for 2 mins, set aside, soak Pearl millet for 15 mins, drain and set aside

In a pressure cooker heat ghee, add mustard seeds, cumin seeds, hing, curry leaves and stir for 2 seconds

Add tomato paste and cook till mushy

Add cauliflower florets, carrots and cook till softened
- 5
Add moong dal and Pearl millet and stir well, add peas and green chilli slit
- 6
Add cumin powder, coriander powder, turmeric powder, red chilli powder, ginger paste and stir well, add 5 cups water and add salt, mix and pressure cook for 3 whistles on high flame

Depressurise and drizzle ghee, serve and enjoy 😊
