Ingredients

Serves 2 servings
  1. 2 packsudon noodles
  2. 7 oz (200 g)thinly sliced beef (chicken or pork can also be used)
  3. 1/2onion, thinly sliced
  4. Your choice of additional toppings, as desired
  5. 1 tablespoonvegetable oil or beef fat
  6. Sukiyaki Sauce
  7. 2 tablespoonssoy sauce
  8. 2 tablespoonsmirin
  9. 2 tablespoonssake
  10. 1 tablespoonsugar (adjust sweetness to taste)
  11. 1/2 cup (100 ml)water or kombu dashi (see kombu dashi recipe ID:24380172)
  12. Toppings
  13. Chopped green onions, as desired
  14. 2egg yolks or soft-cooked eggs

Steps

  1. 1

    In a bowl, mix together the soy sauce, mirin, sake, sugar, and water or kombu dashi to make the sukiyaki sauce.

    Heat the vegetable oil or beef fat in a skillet. Sauté the sliced onion until it becomes tender.

    Add the beef and the sukiyaki sauce to the skillet. Cook until the beef is browned.

    Bring the sauce to a gentle boil, then add the udon noodles. Stir to combine.

    Simmer, stirring occasionally, until most of the liquid is absorbed and the noodles are coated in the sauce.

    Serve in bowls. Top with chopped green onions and place an egg yolk or soft-cooked egg in the center.
