A comforting bowl perfect for chilly days! Udon noodles soak up the rich flavors of sukiyaki for a truly satisfying meal.

In a bowl, mix together the soy sauce, mirin, sake, sugar, and water or kombu dashi to make the sukiyaki sauce.

Heat the vegetable oil or beef fat in a skillet. Sauté the sliced onion until it becomes tender.

Add the beef and the sukiyaki sauce to the skillet. Cook until the beef is browned.

Bring the sauce to a gentle boil, then add the udon noodles. Stir to combine.

Simmer, stirring occasionally, until most of the liquid is absorbed and the noodles are coated in the sauce.

Serve in bowls. Top with chopped green onions and place an egg yolk or soft-cooked egg in the center.
