As part of my diet, I need to eat salmon at least once a week, so I'm always looking for new ways to prepare it to my liking. I love alambre, and I thought of switching it up from beef or chicken to salmon—it turned out delicious! Here’s the recipe. I use nopal tortillas to keep the carbs in check.

Prepare the ingredients. I like to use bell peppers of different colors, but using just one color works too. Heat the olive oil in a pan and sauté the bell peppers and onion until the onion is translucent but not browned.

Cut the salmon into small cubes.

When the vegetables are sautéed, push them to the side of the pan and add the salmon. Let it cook, and halfway through, mix it with the vegetables. Cook until the salmon is done to your liking.

Serve as tacos with a squeeze of lime and your favorite salsa.
