Simply delicious Cake. No egg, no white sugar. Swapped molasses for white sugar. Swapped coconut flour for all-purpose flour. Swapped curd and canned coconut milk for milk, I usaed fresh Pineapple/ Asked Sridhar to slice it. Slices were rather thick.   • 2 tbspbutter
  • 1/4 cupbrown sugar
  • 4 slicespineapple
  • for cake batter:
  • wet ingredients:
  • 1/2 cupoil
  • 1 cupcoconut milk
  • 1 cupcurd
  • 2 tbspmolasses
  • 1 tspvinegar
  • Dry ingredients:
  • 1 cupall-purpose enriched wheat flour
  • 1 cupcoconut flour
  • 1 tspbaking powder
  • 1/4 tspbaking soda
  • 1/2 tspnutmeg grated
  • 1 tsplicorice powder
  • pinchsalt

Steps

Prep time 10mins Cook Time 45minutes
  1. 1

    Make a checklist. keep all ingredients within reach.
    preheatov the oven at 180 degree celcius
    Over low flame in a saucepan take 2 tbsp butter and ¼ cup brown sugar.
    cook on until the sugar dissolves.
    transfer the butter sugar mixture to butter paper lined cake pan. I have used cake pan of dia: 7 inch, height: 4 inch. Spring pan. place slices of pineapple over the brown sugar mixture. fill the gaps with chopped pine apple. also place a few dried cranberries in centre of pineapples. keep aside

    Pineapple cake batter:
    In a large bowl take ½ cup oil, 2tbsp molassesr, 1 cup coconut milk, 1c curd, 1 tsp vinegar and molasses. whisk and mix well making sure the sugar is dissolved completely.
    now place a sieve and add 1 cup all-purpose, 1c coconut flour 1 tsp baking powder, ¼ tsp baking soda, nutmeg.licorice and pinch salt.
    sieve the flour to prevent from any lumps. Mix well using cut and fold method.
    Mix to a thick cake batter consistency without any lumps

    Transfer the cake batter to the prepared cake tin. Smoothen with a spatula
    Pat gently on the counter to remove any air incorporated.
    Bake in a preheated oven at 180 degree celcius for 45 minutes/bake until the toothpick inserted comes out clean.

    Cool completely; slowly unmould the cake peeling off the parchment paper. loosen the apring to remove the cake tin parts. Transfer to a serving plate. Slice the cakes as you please
