Toast the rice in a saucepan with extra virgin olive oil. Gradually add the white wine until it is absorbed. Add the vegetable broth for cooking.

Brown the sausage in a pan. Finish cooking and set aside.

Shortly before the rice is fully cooked, add the sausage.

Finish cooking the rice and turn off the heat. Stir in the gorgonzola cheese and let it rest for a minute.

Plate as desired.
