Modern Rice Pudding 🍜 with Yogurt, Coconut, and Caramelized Pistachios
When I was little, my favorite desserts were rice pudding and custard with cookies. This is a modern twist on rice pudding: I swapped milk for yogurt, sugar for honey, and added shredded coconut and caramelized pistachios. It's a real treat and a pleasure for the palate.

Cook the rice, drain, and let it cool completely. In a bowl, mix the yogurt with the cold rice.

Add the honey and gently mix.

Next, add one tablespoon of shredded coconut, mix gently, then add the second tablespoon. Transfer the mixture to a serving plate or bowl. Cover with plastic wrap and refrigerate for a while.

Meanwhile, shell the pistachios and chop them in a food processor until coarsely ground, not powdered.

Make caramel as you usually do.

Place a piece of parchment paper on a plate, pour the caramel over the pistachios (reserve a little for decoration if you like).

Take the rice pudding out of the fridge, remove the plastic wrap, and top with the caramelized pistachios. You can break up the caramel or place the whole piece in the center, and sprinkle some extra chopped pistachios over the rice. Grab a spoon and enjoy! Hope you like it.
