Prepare the Tofu: Remove the tofu from its package, drain any excess liquid, and press it using a tofu press or a clean towel. Once pressed, cut it into 1-inch cubes.

Fry the Tofu: Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the tofu cubes and fry until golden and slightly crispy on at least two sides. Set aside.

Make the Sauce: Peel the garlic and roughly chop the onion. In a blender or food processor, combine the roasted red pepper, onion, garlic, dried Italian herbs, Sriracha, smoked paprika, tomato ketchup, soy sauce, vinegar, salt, water, and coconut milk. Blend until smooth.

Simmer the Tofu: Return the fried tofu cubes to the skillet or a pot. Pour the blended sauce over the tofu and heat over medium-high heat until it begins to simmer.

Thicken the Sauce: Reduce the heat to medium-low and cook for a few minutes, stirring occasionally, until the sauce thickens.

Serve & Enjoy: Garnish with fresh herbs and serve hot with rice, pita bread, or a side salad.
