I love cod cooked any way, but I especially enjoy it as fritters or croquettes. For me, it's the perfect bite and a must-have for any appetizer spread.

Drizzle a little oil in a skillet and sauté the cod for a couple of minutes.

Sift the flour into a bowl, add the baking powder, and mix.

Add the beaten egg, water, flaked cod along with any juices, parsley, and a pinch of salt. Mix well until you have a smooth, lump-free batter.

Heat plenty of oil in a skillet—enough to cover the fritters at least halfway.

Scoop the batter with a spoon, drop into the hot oil, and fry until golden brown on both sides. Transfer to a plate lined with paper towels to drain excess oil.
