Ingredients

8 rolls
  1. 3/4 cupmilk (200 grams)
  2. 1egg
  3. 7 tablespoonsunsalted butter, at room temperature (100 grams)
  4. 1/2 cuppacked brown sugar (100 grams)
  5. 4 cupsbread flour (500 grams)
  6. 1 packetdry yeast
  7. 1 teaspoonground cinnamon
  8. 1 teaspoonvanilla extract
  9. 1 pinchsalt
  10. 1 tablespoonunsweetened cocoa powder
  11. 3/4 cuptahini (200 grams)
  12. For topping: brown sugar, sesame seeds

Steps

    In a bowl, combine the milk, yeast, and a little of the sugar. Stir and let sit for 10 minutes.

  2. 2

    Add the egg, butter (at room temperature), vanilla, flour, and salt. Mix with a mixer or knead by hand until you have a soft, pliable dough.

  3. 3

    Cover the dough and let it rise for one hour.

  4. 4

    Meanwhile, make the filling. In a bowl, mix the tahini, cocoa powder, sugar, and cinnamon.

  5. 5

    Once the dough is ready, divide it into eight pieces. Roll each piece into a rectangle, fill with the filling, roll up, and shape into a snail shape. Sprinkle with sesame seeds and a little sugar on top.

    Bake in a preheated oven at 350°F (180°C) with fan, for 25 to 30 minutes.
