A traditional Indian spiced milk drink, perfect for summer or festive occasions like Holi and Mahashivratri.

Make the Thandai Masala:
Soak almonds, cashews, melon seeds, poppy seeds, and fennel seeds in water for 4-5 hours (or overnight).
Drain the soaked ingredients and grind them into a fine paste along with black pepper, cardamom, dried rose petals, and saffron. Add a little water if needed.

Prepare the Milk:
Heat the milk in a pan until it comes to a gentle boil.
Add the sugar and stir until dissolved.

Combine the Masala and Milk:
Mix the Thandai masala paste into the milk.
Simmer for 5-7 minutes, ensuring the flavors infuse well.
Cool the Thandai:
Remove the milk from heat and let it cool to room temperature.
Strain the mixture to remove any coarse particles (optional, for a smoother drink).
5. Chill and Serve:
Refrigerate the Thandai for at least 2-3 hours.
Serve chilled in glasses, garnished with saffron strands and crushed pistachios.
