Ingredients

  1. Thandai Masala:
  2. 15 -20Almonds
  3. 2 tablespoonsMelon seeds (magaz)
  4. 1 tablespoonPoppy seeds (khus-khus)
  5. For the Drink:
  6. 1 literFull-fat milk
  7. 5-6 tablespoons (adjust to taste)Sugar
  8. A pinch Saffron strands (for garnish)
  9. Crushed pistachios
  10. For garnish
  11. 1 tablespoonFennel seeds (saunf)
  12. 6-8Black peppercorns
  13. 4-5Cardamom pods
  14. 1 tablespoon (optional)Dried rose petals
  15. A pinchSaffron strands
  16. 10-12Pistachios
  17. 8-10 (optional)Cashews

    Make the Thandai Masala:

    Soak almonds, cashews, melon seeds, poppy seeds, and fennel seeds in water for 4-5 hours (or overnight).

    Drain the soaked ingredients and grind them into a fine paste along with black pepper, cardamom, dried rose petals, and saffron. Add a little water if needed.

    Prepare the Milk:

    Heat the milk in a pan until it comes to a gentle boil.

    Add the sugar and stir until dissolved.

    Combine the Masala and Milk:

    Mix the Thandai masala paste into the milk.

    Simmer for 5-7 minutes, ensuring the flavors infuse well.

    Cool the Thandai:

    Remove the milk from heat and let it cool to room temperature.

    Strain the mixture to remove any coarse particles (optional, for a smoother drink).

    5. Chill and Serve:

    Refrigerate the Thandai for at least 2-3 hours.

    Serve chilled in glasses, garnished with saffron strands and crushed pistachios.

    Enjoy this refreshing and flavorful drink!.
