Homemade Spiced beef & potato cakes
You can use ready made packet breadcrumbs if you wish.
Cooking Instructions

Place the mashed potato into a suitable large bowl.

In a little oil, stir fry the minced beef until nicely coloured in a suitable pan (I used my wok).

Add the Garlic, chilli pepper, red pepper and onions. Continue to stir fry the mix until the onions begin to soften.

Add this to the bowl with the mashed potatoes.

Add the Piri Piri seasoning and chopped parsley. Mix toger until well combined. Allow to cool completely (in a fridge overnight is ideal)

On a lightly floured surface tip the mix out of the bowl and gently knead to bring all the mix together. Divide the mix into equal sizes. (I did four large ones but you could do eight small ones if you wish)

Gently mould into "burger" size cakes/patties and put to one side.

Situated a bowl with the breadcrumbs in and another bowl with the egg in close by. Doing one cake at a time coat them in the egg mix then into the breadcrumbs making sure each one is fully coated.

Heat a deep frying pan of oil (160 degrees) and gently lower the cakes into the hot oil, using a chip basket. Do this in batches so the cakes are fully submerged and not touching each other. Remove when a golden colour is reached and place on kitchen paper to drain excess oil.

At this time you can decide to heat the whole batch together or just a few (you could freeze some for another day)

Place the amount of cakes you require on an oven tray and heat until the centre of the cakes reach 70 degrees plus

The headline for this recipe should perhaps be longer, but that would involve some French, so I include a comment here instead. The potato cakes are made with a Pâte à choux (light pastry dough).My inspiration for the potato cakes came from Ruhlman's book called Ratio. However, I did veganize his method a bit by replacing half of the eggs with a simple home made chia seed egg replacement mixture (easily found on the internet).The following recipe will make about 9 pretty thick potato cakes (like in the picture above), or about 14 thin ones. Better to make them thinner if you like them a bit more crispy-like (I will do that the next time I make this). After forming, refrigerate the extra potato cakes and cook them the next day or so.I hope you will find the meal as tasty as me.PS: In the picture above I forgot to grind the chia seeds for the potato cakes, and they look a bit like whole peppercorns.
