3spring onions chopped

For Dressing:
2 tbsplemon juice
1/2 tbspfish sauce and adjust to taste
1 tbsptoasted sesame oil
1 tspsugar or honey
1/2 tspgrated ginger

In a bowl mix the carrots, spring onions, tomato, red onion, peanuts and chilli, keep aside.

For Dressing: in a small bowl/ cup, whisk together lemon juice, fish sauce, sugar / honey, toasted sesame oil and ginger. Pour the dressing over the salad and toss well.

Garnish with fresh coriander leaves and serve immediately. Note: if fish sauce is unavailable, use soy sauce 1 tbsp.
