This recipe is very versatile. You may use salmon,mackerel, or tuna. You can just about add anything to this recipe to change it up make your own! :) after all I basically just used what I had on hand already and they turned out great! Yum!

Ingredients

  1. 8 ozPackage of crab meat coarsely chopped (real lump or imitation is fine)
  2. 2 cupSeasoned bread crumbs (reserve about 1/2 cup)
  3. 1/4 cupMinced onion
  4. 1/2A Jalapeño minced or about 4 minced slices from a jar
  5. 1/4 cupMayo
  6. 1Old bay seasoning
  7. 1 tbspOil

Cooking Instructions

    Add crab meat, onions and jalapeños to a mixing bowl. Season with old bay seasoning to taste. Add 1 and 1/2 cups of bread crumbs to crabmeat mixture.

    Now Add mayo and slowly mix with a fork until mixture is thoroughly moist. If it seems a little too dry you can always add about a teaspoon or so. You want it to be a little firm so the crab cakes won't fall apart while frying. Form mixture into balls and let set in the refrigerator for at least 30 mins.

    Add the remaining bread crumbs to a plate. Set aside. Pour oil in skillet and set range eye to medium heat. Roll each crabmeat ball in the breadcrumbs. Make sure they're coated evenly.

    Place crabmeat ball in between your hands and press lightly enough to form patties. Add to skillet. Cook patties on each side for about 6 minutes or so or until golden brown on each side.

    Drain on paper towels

    Serve with a salad and remoulade
