Ingredients

Serves 4 servings
  • 4 1/4 cupswhole milk (1 liter)
  • 1/2 cupshort-grain rice (100 grams)
  • 2 stripslemon peel
  • 2 stripsorange peel
  • 1cinnamon stick
  • 1/3 cupsugar (70 grams)
  • 2 teaspoonsbutter (10 grams)

    Add the milk, rice, cinnamon stick, and citrus peels to a large pot.

  2. 2

    Bring to a gentle simmer over medium heat for 40 minutes, making sure it doesn't boil vigorously.

  3. 3

    Stir continuously; the more you stir, the more starch the rice releases, giving the pudding a creamier texture.

  4. 4

    When the pudding reaches your desired texture, remove the peels and cinnamon stick, add the sugar, and cook for another 10 minutes.

  5. 5

    Remove from heat, let it rest for 1 minute, then stir in the butter until melted.
