  • 1 cupcooked jasmine rice (about 200 grams)
  • 4 teaspoonspreserved mustard greens (kana chai), or more to taste
  • Chinese pork sausage (lap cheong), sliced
  • 1/3 cupdiced carrots (about 50 grams)
  • 1/3 cupshelled edamame (about 50 grams)
  • 1/3 cupminced garlic (about 30 grams)
  • 2large eggs
  • 2 teaspoonslight soy sauce
  • 1 teaspoonsweet soy sauce
  • 1 teaspoonvegetable oil

    Heat a wok or large skillet and add the vegetable oil. Once the oil is hot, add the minced garlic and stir-fry until fragrant.

    Add the sliced Chinese pork sausage and stir-fry until combined.

    Add the preserved mustard greens and stir-fry until everything is well mixed.

    Add the cooked rice and stir-fry until evenly combined. (Tip: Use day-old rice that has been refrigerated for the best texture.)

    Crack the eggs into the pan and stir to combine with the rice.
