Heat a wok or large skillet and add the vegetable oil. Once the oil is hot, add the minced garlic and stir-fry until fragrant.

Add the sliced Chinese pork sausage and stir-fry until combined.

Add the preserved mustard greens and stir-fry until everything is well mixed.

Add the cooked rice and stir-fry until evenly combined. (Tip: Use day-old rice that has been refrigerated for the best texture.)

Crack the eggs into the pan and stir to combine with the rice.

Season with 2 teaspoons light soy sauce and 1 teaspoon sweet soy sauce. Taste and adjust seasoning as needed, then continue stir-frying until everything is well mixed.

Add the vegetables (carrots and edamame) at the end to keep them crisp and retain their nutrients. (If you prefer softer vegetables, you can add them earlier and stir-fry until tender.)
