First we slice the peppers to thin strips sprinkle with salt and pepper add olive oil. Place them in roasting tin and roast until almost soft about 25 minutes.

Transfer roasted peppers into a large pan, mix in tomatoes, passata, oregano, garlic, and most of the basil. Simmer slowly for 30-35 minutes

In the meantime cook the pasta as per instructions on packet, drain.

Mix pasta with the cooked pepper add remaining basil and parsley. It is ready to serve.

Cut bread into tiny squares and fry them in little oil, scatter crouton on top of pasta, grate parmesan and enjoy your meal.
