Condensed Milk Biscuits

If you want to use up some leftover Condensed Milk, try this simple Biscuit recipe. I first made the Biscuits with 1/4 cup Condensed Milk, 60g Butter and 1 cup Plain Flour. The Biscuits turned very hard. To make softer texture, I added more Butter and Corn Starch. Condensed Milk is very sweet, but you would need to add 1 tablespoon Sugar for the sweetness similar to Shortbread.

Ingredients

30 minutes plus cooling time
24 biscuits
  • 80 gButter *softened
  • 1/4 cup (90 g)Condensed Milk *at room temperature
  • 1 tablespoonCaster Sugar
  • 1 pinchSalt
  • 1 cupPlain Flour
  • 2 tablespoonsCorn Starch *plus extra

Steps

30 minutes plus cooling time

    *Note: If you use 60g Butter, you don’t need to add Corn Starch, but I have found the Biscuits are too hard. To make softer texture, I added 80g Butter and Corn Starch. I suppose you can reduce the amount of Plain Flour and add some Corn Starch.

    In a mixing bowl, combine softened Butter, Condensed Milk, Sugar and Salt until blended well. Add Flour and Corn Starch, and mix as you cut the Butter & Condensed Milk mixture into Flour. Use your hands to bring the mixture together into dough. *Note: Add a small amount of extra Corn Starch if too soft.

    Place the dough on a sheet of plastic warp, shape into a log, and wrap it. Refrigerate until firm. *Note: It might be easier to make 2 logs.

    When it is firm, preheat oven to 160ºC. Line a baking tray with baking paper. Remove and discard the plastic wrap on the dough, slice into 6-8mm thick rounds. *Note: You can roll out the dough and cut out shapes if you prefer.

    Place on the prepared tray. Bake for 20 minutes OR until nicely golden, and cool on a wire rack.
