Chicken and Spring Onion Zōsui (Japanese Rice Porridge)

I like to make this for my friends and family when they are feeling down or ill. It is my own version of Japanese rice soup (known as zōsui), a comforting dish I always had growing up.
A well-balanced, hearty meal, this soup will make you feel instantly better!

In a pot, add the spring onions, leeks, ginger, pepper and chicken. You can tweak the ratio of the vegetables to your liking, and add whatever else you wish (shiitake/enoki mushrooms and carrots work great too!).

Cover the pot with water and dashi and bring to a boil. If you have homemade dashi stock, use that instead!

Reduce to a simmer and let the soup cook for 10-15 mins. Skim off any impurities that rise to the top.

Cut chicken with scissors, serve with rice and freshly ground black pepper. I topped mine with some boiled eggs too. Enjoy!
Tips
To check if the dough has fermented properly, gently poke it with your finger. If the indentation remains and doesn't spring back, the dough is ready.
