Fresh cream cake

Steps

Heat oven to 180°c

Whisk together sugar and butter

Beat in eggs

Sift in flour, mixture should be droopy, add a little milk if needed

Divide the mixture between two cake tins.

Bake for 25mins and allow to cool
- 7
Once cooled, add jam and whipped cream then sandwich the cakes together
- 8
Add cream on top and along the sides of the cake using a spatula
- 9
Toast coconut lightly until golden in a pan. Once cooled add along the sides of the cake
