Ingredients

30-40 minutes
Serves 3 servings
  • 3 cupscooked white rice (about 600 grams)
  • 3large eggs
  • 2 tablespoonsXO sauce
  • 10small shiitake mushrooms
  • 1 cupshredded cabbage (about 70 grams)
  • Chopped green onions, to taste
  • Soy sauce, to taste
  • 1 pinchblack pepper

Steps

30-40 minutes
  1. 1

    Slice the shiitake mushrooms and shred the cabbage. Beat the eggs and scramble them in a pan; set aside.

  2. 2

    Heat oil in a pan and sauté the mushrooms and shredded cabbage until fragrant.

    Add the scrambled eggs and stir-fry quickly.

    Add the cooked rice and stir until well combined. Pour soy sauce around the edge of the pan and add XO sauce, then stir-fry everything together.

    Season with black pepper and sprinkle with chopped green onions before serving.
