Slice the shiitake mushrooms and shred the cabbage. Beat the eggs and scramble them in a pan; set aside.

Heat oil in a pan and sauté the mushrooms and shredded cabbage until fragrant.

Add the scrambled eggs and stir-fry quickly.

Add the cooked rice and stir until well combined. Pour soy sauce around the edge of the pan and add XO sauce, then stir-fry everything together.

Season with black pepper and sprinkle with chopped green onions before serving.
