One of the symbols of peace is the dove, so why not make a festive crostata decorated with little shortbread doves that look like they're flying?

Make the shortcrust pastry by placing the flour, butter, and sugar in a bowl. Quickly mix together, then add the eggs, potato starch, and a bit of grated lemon zest. Knead until you have a smooth dough (add a splash of water if needed). Chill in the refrigerator for 30 minutes.

Meanwhile, prepare the lemon cream as follows.

Grease and flour a 9 1/2-inch (24 cm) tart pan. Take a little more than half of the pastry dough, roll it out, and line the pan. Pour in the cooled lemon cream. Roll out the remaining dough and, using dove-shaped cookie cutters, cut out cookies to decorate the top of the crostata. Bake at 350°F (180°C) for about 20-25 minutes.

Remove from the oven and place on a serving plate. Dust with powdered sugar.
