To start with wash the mangoes and boil it to the point till it's soft and tender either in the pressure cooker for 2 whistles or in a pan for 10 minutes. Insert a knife to check whether it's completely done. Always take small, pulpy, hard mangoes for making aam panna. Take those mangoes which are sour with these mangoes the taste and benefits are way more. Once they are done the colour of the mangoes will be light yellow. At that point off the flame and allow it to cool down completely.

Peel it once it cool down and take all the pulp out from skin also and discard the seeds. Now grind the pulp with green chilli, ginger and both salt along with jaggery. Don't add water to it unless you can't grind it smooth. In case you need water then add only 2-3 tbsp water. Make a fine smooth paste of it. You can also add fresh mint leaves while grinding. This gives a refreshing taste to the panna. Once smoothly grinded then transfer it to a bottle and refrigerate upto a week.

Now to make the individual servings add ice cubes in the serving glasses. Then add 3-4 tbsp aam panna pulp in it now add black salt, white salt, dry roasted cumin powder and dried mint all to your taste. Then add water and mix well.
