Ingredients

  1. 1 kgPork loin
  2. 15 mlOlive Oil
  3. 5 mlLemon Juice
  4. 5 mlfresh Parsley
  5. 5 mlminced Garlic
  6. Pinchfreshly ground Black Pepper
  7. Lemon Aioli
  8. 125 mlMayonnaise
  9. 30 mlLemon juice
  10. 5 mlminced Garlic
  11. 30 mlfresh Parsley
  12. Pinchfreshly ground Black Pepper

Steps

  1. 1

    Preheat oven to 190°C

  2. 2

    Whisk together Olive Oil, Lemon juice, Parsley, Garlic and Black Pepper. Apply to the Pork loin with a brush.

    Place Pork loin on a rack in a roasting tray. Place in oven and roast for about an hour or till internal temperature is 63°C.

    Remove from oven and rest for atleast 5 minutes before slicing.

    Whisk together Lemon Aioli and drizzle over sliced Pork to serve.
