Pork Loin with a Lemon Aioli

Preheat oven to 190°C

Whisk together Olive Oil, Lemon juice, Parsley, Garlic and Black Pepper. Apply to the Pork loin with a brush.

Place Pork loin on a rack in a roasting tray. Place in oven and roast for about an hour or till internal temperature is 63°C.

Remove from oven and rest for atleast 5 minutes before slicing.

Whisk together Lemon Aioli and drizzle over sliced Pork to serve.
