  • 10.5 ozspaghetti (300 g)
  • 3eggs
  • 1 cupgrated Parmesan cheese (about 3.5 oz / 100 g)
  • 3.5 ozNapoli-style salami, diced (100 g)
  • 3.5 ozsharp provolone cheese, diced (100 g)
  • Salt, to taste
  • Black pepper, to taste
  • as neededExtra-virgin olive oil,

    Cook the spaghetti and drain when al dente.

    In a bowl, beat the three eggs. Add the Parmesan, salt, pepper, diced salami, and diced provolone cheese.

    Add the spaghetti to the egg mixture and mix well.

    Heat extra-virgin olive oil in a skillet. When hot, pour in the spaghetti mixture. Cook on both sides until a golden crust forms.

    Let drain on paper towels. Serve hot.
