Mango Ceviche
A delicious, fresh vegetarian ceviche.
Steps

Soak the cilantro in water with produce wash. After the recommended time, remove, dry, and finely chop it.

Place the finely chopped cilantro in a bowl.

Add the juice of the limes to the cilantro.

Slice the red onion into thin strips and add to the bowl.

Dice the jicama into small cubes and add to the bowl.
- 6
Stir the mixture in the bowl before adding the mango.
- 7
Peel the mangos and dice them into small cubes, about the same size as the jicama, then add to the bowl.

Add freshly ground salt and pepper to taste, and mix one last time.

Let the mixture rest for about 10 minutes in the refrigerator, then serve on plates and enjoy.
