Ingredients

  1. Pumpkin Fritters
  2. 1ripe Banana, sliced
  3. 1 kgButternut, cooked, mashed and cooled
  4. 375 mlGluten-Free Flour
  5. 15 mlBaking Powder
  6. 2 mlSalt
  7. 1Egg
  8. Sauce
  9. 1Orange
  10. 15 mlButter
  11. 250 mlOrley Whip
  12. 15 mlCustard Powder
  13. 100 mlWater

Steps

  1. 1

    For the Fritters:
    Fry the sliced Banana until it starts to caramelize. Set aside to coo down.

    Combine the caramelized Banana, mashed Butternut, Glutten-Free Flour, Baking Powder, Salt and Egg.

    Heat oil in a pan over medium high heat. Place spoonful of the batter into the oiand fry until golden brown.

    Place on a kitchen towl to remove excess oil.

    For the Sauce:
    Zest the Orange then juice the Orange.

    Place the Butter, Orange Juice, Orange Zest, and Orley Whip in a saucepan and bring to a boil over medium heat.

    Combine the Custard Powder and Water.

    Pour the custard mixture into the saucepan pan while continuously wisking. Bring to a boil for a few minutes unyil the mixture start to thicken.

    Pour the sauce over the fritters and enjoy.
