An easy to make enchilada sauce, not using any fresh ingredients. Not too hot, for more heat add more chili powder or any of the recommended optional ingredients.

An easy to make enchilada sauce, not using any fresh ingredients. Not too hot, for more heat add more chili powder or any of the recommended optional ingredients.

Prepare all the dry ingredients in a small bowl.

Make a roux by mixing vegetable oil and flour in a pot on medium heat for a couple of minutes, stirring constantly.

Add tomato paste and cook for a minute, constantly stirring. You might need to add a bit more oil at this stage.

Add in the spices and keep stirring for about a minute.

Add your stock of choice and apple cider vinegar, and let simmer on low to medium heat for five to ten minutes.
