Seafood and Fish Paella

Cut the squid in half and separate the bodies from the tentacles.

In a paella pan with hot oil, sear the prawns, then set them aside.

Finely chop the onion and sauté it in the paella pan. Once softened, add the tomatoes.

Once the tomatoes are cooked down, blend the sautéed mixture.

Toast the rice in the paella pan with hot oil, then add the blended mixture, seasoning packet, and food coloring. Season to taste.

Add the seafood stock and cook for 15 minutes or as directed on the rice package.

With 10 minutes left, add the squid.

With 8 minutes left, add the fish cut into chunks.

With 5 minutes left, add the remaining seafood.

When done, let it rest, then sprinkle with chopped garlic and parsley on top.
