Papad sabji is a delicious traditional Rajasthani recipe which is prepared in no time. It is common to prepare it in Rajasthan. But in other parts of India it is prepared on special occasions.

In summers when certain vegetables are not available and you feel like preparing some special vegetable, you can prepare this for a change. Apart from having a great taste, it also looks very attractive. It is usually prepared in tomato and curd gravy, I have also added finely chopped onions in it.

Ingredients

15 minutes
3 servings
  • 2-3moong dal papad
  • 3/4 cup curd
  • 2tomatoes
  • 1onion
  • 2green chillies finally chopad
  • 1/2' inch ginger (grated)
  • 5-6curry leaves
  • 1/2 teaspoon turmeric powder
  • 1/2tsp red chilli powder
  • 1/2tsp coriander powder
  • 1/3 tsp kashmiri red chilli powder
  • 1/3 tsp vegetable masala
  • 1 tsp kasuri methi
  • 1 tsp mustard seed
  • 1 tsp cumin seeds
  • 1bay leaf
  • pinch of asafoetida
  • salt as per taste
  • ghee / cooking oil as per need
  • Finally chopped coriander leaves as need

Steps

    First of all, roast the moong dal papad on a hot pan. Keep the flame medium

    Wash and chop onion, tomato and green chilli finely and churn curd with the help of a whisker.

    Heat ghee/cooking oil in a pan. After the ghee/oil is heated, add mustard and cumin seeds and then add asafoetida. Now add grated ginger, curry leaves and saute them, then add onion and cook till it turns red.

    Now add tomatoes and cook till it becomes soft.

    Then add all the spices mentioned and fry well for 2 minutes, then add some water and salt. Now add whisked curd and cook while stirring continuously. #Note- make sure to whisk the curd well, so there are no lumps this way it wont split as it cooks.

    Let it cook for 2-3 minutes, then add salt and water as required and when it boils, add roasted papad and kasuri methi. After 2-3 minutes, add green coriander.Lower the flame, keep cooking the papad sabzi till all the ingredients are mixed welland turn off the gas.

    Serve it with bajra roti, parathas etc.
