Place the semolina in a large bowl and add 1 teaspoon salt. Add the butter and oil, then rub the mixture very well with your hands until the semolina turns white.

Let the mixture rest overnight. The next day, sprinkle with water and orange blossom water, and gently mix with your fingers without kneading. Let it absorb the liquid a bit. Prepare your date paste filling—it should be soft but not too runny so it blends well with the dough. Shape into logs, press, and cut into pieces.

Preheat the oven to 350°F (180°C). Bake for just 20 minutes. I prefer my maqrout to stay yellow and not brown.
