In Spain, one of the most iconic dishes is the “Tortilla de Patatas” (Potato Omelette). Anyone who visits the country has to try it!
Everyone has their own way of making it—how they slice the potatoes, whether they add onions or not, whether they like it soft in the middle or fully cooked…
Today, I’m going to share how I like to make it, so you can try it yourself without having to fly all the way to Spain!

Today, I’m going to share how I like to make it, so you can try it yourself without having to fly all the way to Spain!

The first thing we’ll do is peel and cut the potatoes. There are many ways to cut them, but I like slicing them thinly. You can see how in the video below!

Next, we’ll heat mild olive oil or sunflower oil in a frying pan. You need to add a good amount so that the potatoes are well covered and don’t fry too quickly!

Now we’ll peel and finely chop the half onion.

When the oil is hot, we can add the potatoes. To check if the oil is hot enough, you can drop in a small piece and see if it bubbles around it!

Next, we’ll add the chopped onion and mix everything well!

Let’s add salt to taste!

Keep stirring the potatoes and onion until the potatoes are soft. I like to mash them a little so the tortilla has a softer texture. You can see how I do it in the second video!

Beat the 6 eggs in a bowl. Then, using a slotted spoon, drain the potatoes and onions to remove as much oil as possible and add them to the beaten eggs.

Mix everything with a fork and taste for salt. Take a small piece of potato dipped in the egg to try. If it needs more salt, add and mix again. Keep adjusting until it’s seasoned to your liking!

Remove most of the oil from the pan to cook the tortilla. If your pan is non-stick, you just need a light layer of oil left to prevent sticking.

Pour the mixture into the pan over medium heat. Stir the center so the part cooking on the bottom spreads to the center and sets. Then let the rest of it cook. Move the edges to ensure they’re not sticking.

Move the pan in small circular motions to make sure the tortilla is loose and not sticking to the edges.

Grab a plate that is slightly bigger than the pan’s diameter to flip the tortilla.

Keep moving the pan in circles so it doesn’t stick and continues cooking without burning!

We’ll grab a clean plate and do the final flip! At home, we cut it into triangles when it’s just for us. But if we were throwing a party with guests, we’d cut it into small squares so they can snack on it. 😜

We like it set on the inside but not completely dry. Let’s eat it!!! 🍽️
