Prepare the Spinach Purée ~
Blanch the spinach in hot water, then immediately rinse it under cold water to retain its color.
Grind the spinach with green chilies and
ginger into a smooth purée. - 2
In a bowl, combine wheat flour, kalonji, salt, oil, and spinach purée.
Knead the mixture into a smooth dough.
Cover the dough with a muslin cloth and
let it rest for some time. - 3
In another bowl, mix grated paneer, green chilles, chopped onion, ginger, salt, red chili powder, cumin seeds, coriander, and methi leaves. Mix well to form the stuffing.

Divide the dough into equal size balls.
Roll out a ball into a small circle, place a portion of the paneer stuffing in the center, and seal it by bringing the edges together.
Gently roll the stuffed ball into a flat paratha 🫓 - 5
Heat a tawa
Place the rolled paratha on the tawa and cook until golden spots appear on one side.
Flip and cook the other side. Apply ghee or oil while cooking.
Repeat with the remaining dough and stuffing.Serve hot with raita / pickle / Chunda & green chutney.
