Lobia is so good for health and by boiling and shallow frying for cutlets gives it a tasty yet a healthy touch.

Soak Lobia overnight and boil next day, boil potatoes, cool, mash lobia and boiled potatoes together

In a wok heat oil, add chopped onions and fry for 2 mins to soften, add grated carrots and chopped green capsicums, fry for 1 mins, set aside and add to mashed lobia

Soak bread in milk, and press to make it smooth, add to the lobia mix

Add chaat masala, add chopped coriander leaves, add red chilli powder, black pepper powder, white pepper powder, lime juice, chopped mint leaves and mix well

Give Cutlet shape

In a pan heat oil and add cutlets, shallow fry for 2 mins and flip sides, set aside

Plate with lettuce and cucumbers and enjoy
