Japanese potato salad is my favorite potato salad, hard stop. It's tangy, light and not heavy on the mayo like American potato salad recipes usually are.

Japanese potato salad is my favorite potato salad, hard stop. It's tangy, light and not heavy on the mayo like American potato salad recipes usually are.
Steps

Peel and cut potato into cubes

Boil in salt water until potato is soft
- 3
Boil eggs in a separate pot until hard boiled (10 minutes)

Thinly slice onion, carrot, cucumber and let sit in water
- 5
Once potatoes are soft, drain water. To the freshly boiled potatoes, sprinkle rice vinegar and begin to mash with a fork, but not too much, chunks are fine

Once eggs are cooked, peel and chop into a dice. Drain and squeeze excess water from veggies. Add veggies and eggs to the potatoes and mix

Add kewpie mayo to potato, egg and veggie mixture. Add more if you prefer a creamier consistency

Add salt to taste
