Chicken pot pie

Chicken pot pie is a classic comfort food consisting of a creamy chicken and vegetable filling encased in a flaky pie.
Not only is it warm and cozy, but it's an all-in-one meal, with protein and veggies. Nothing compares to making Chicken Pot Pie from scratch with fresh ingredients. Some recipes use a biscuit topping or puff pastry instead of a traditional pie crust for convenience.
Most recipes place a pie crust in the bottom of the dish, fill it with the chicken filling and cover it with another pie crust. I do not like this method as the pot pie becomes soggy.
You can prep the chicken filling a whole day in advance, stored in the fridge. Or, you can prep the whole pie one day in advance. Make the filling and allow it to cool in the refrigerator. Pour cooled filling into chilled pie crust, cover and refrigerate until baking the next day.
Chicken pot pie doesn't have to be a huge ordeal! Try it the next time you're craving a hearty dish that will keep your whole family happy. Leftovers are just as good the next day!

Preheat the oven to 425 degrees F (220 degrees C.)

Combine chicken, carrots, peas, and potatoes in a saucepan.

Add water to cover and bring to a boil. Boil for 15 minutes, and then remove from the heat and drain.

Melt butter in another saucepan over medium heat.

Add onion and cook until soft and translucent, 5 to 7 minutes.

Stir in flour, salt, and pepper.

Slowly stir in chicken broth and milk.

Reduce heat to medium-low and simmer until thick, 5 to 10 minutes.

Remove from heat and set aside.

Place chicken and vegetables in the bottom of the dish.

Pour hot broth mixture over top.

Cover with puff pastry, seal the edges, and cut away any excess dough.

Make several small slits in the top to allow steam to escape.

Beat the egg and egg wash, the pies.

Bake in the preheated oven until pastry is golden brown and filling is bubbly, 30 to 35 minutes.

Cool for 10 minutes before serving.
