Cook pasta according to package instructions

In a pan on medium heat add in your guanciale. Let it cook until crisp (4-5 minutes) or until most of the fat is rendered out

Add diced carrot, celery and onion to the pan. Sauté for 4-5 minutes until softened. Add garlic and cook for another minute until fragrant.

Stir in 1 tbsp tomato paste, cook for 1-2 minutes until caramelized

Add reserved pasta water, start with 2 tbsp at a time and bring it to a simmer

Toss in drained pasta. Stir and toss until the sauce emulsifies and coats the pasta. Add more pasta water if needed

Season with salt and pepper to your liking. Optional but drizzle a tbsp of heavy cream for a creamier sauce.
