Bhaidku – A traditional and ancient meal recipe from Gujarat. It is easy to digest, rich in plant protein and fiber, and is a family’s favorite meal recipe. It is an easy, tasty, and more importantly healthy one-pot meal. it is an ideal morning breakfast meal or can also be served for lite lunch and dinner with curd and pickle with it.

First of all, togather all the ingredients. Now add wheat and pearl millet in a pan, dry roast for 2 to 3 minutes on a low to.medium gas flame. Since these two grains take time to roast, roast them first.

Then add rice, split green moong dal, arhar dal, split yellow moong dal and dry roast all the grains together on medium flame of gas. Roast till some aroma comes out of these grains. After that, cool down the roasted grain mixture and grind it into coarse flour. The texture of the powder should resemble sand or semolina (sooji).

Bhaidku flour is ready. Store it in an airtight container. This flour stays suitable for up to 3 months. In a mixing bowl, take 1 cup of bhaidku flour. Add Buttermilk and water to it. Mix well and let it soak for 20 minutes.

Now heat the ghee in a pan, add cumin seeds, sweet curry leaves, coarsly gring peanut powder and ginger-green chili paste and saute.

Then add 4 cups of hot water and salt to this and let the water boil. When this water boils, add the soaked bhaidku flour mixture in it, add turmeric powder and mix well. Now cover the lid and let it cook on medium flame of gas for 10 to 15 minutes. After the bhaidku cook, till it is properly cooked. Check the seasoning. Then Switch off the flame.

Now our very healthy Bhaidku is ready for serve. Garnish with green coriander leaves. Serve it hot with curd and pickle.
