Mujaddara or Mujadara is a signature Middle Eastern dish of Lentils, Rice and caramelized Onions. A bold and a comforting dish often served with a topping of crispy Onion rings and a side of plain Yoghurt.
This is one of the best go to meals when it comes to something homemade and hearty. It's a one pot wonder that can be whipped up when one feels lazy to cook a lavish meal or simply wants to avoid heavy meals or even when tired and exhausted. Steps

First of wash and rinse the black Lentils thoroughly. Soak them in enough clean drinking water for about an hour. Boil or pressure cook the lentils until done yet firm. Remove, drain and set aside.

In a large cooking pot, heat oil with a stick of cinnamon. Add chopped onions and cook until they are dark golden brown. Also add salt and the rest of the powdered spices as mentioned.

Now add the cooked lentils too along with the soaked and drained Rice. Mix and cook until done. Keep checking once or more in between to keep an eye on it. In the meantime heat oil on a medium high to fry the sliced onions.

Fluff it up carefully in order not to break the slender grains. It's all ready to be dished out now.

Let the mujaddara rest for a while prior to serving. Garnish with chopped coriander or parsley greens. And then finally top with the caramelized onions for that signature look. Serve piping hot right away. Enjoy!
