Mukimo or Irio is a Kenyan meal prepared by mashing potatoes and green vegetables. I like to serve it with beef stew, nyama choma, chicken stew or fried cabbage.

Steps

Peel potatoes if you desire, Cut potatoes into quarters.

Put in a large pot, cover with water add salt and bring to a boil.

Wash your greens. In a separate pot, add half a cup of water, salt, and bring to a boil. Then put them into a blender along with some of the cooking water.

As your potatoes boil, add your Githeri and cover to cook for a few minutes.

Cook until potatoes are soft, add the blended greens, drain the extra water and mash until potatoes are smooth.

Mash until lumps are gone

Serve with your favorite stew and enjoy.
