Ginger Rice Porridge for Colds

A light, comforting porridge for days when you're feeling under the weather.
If you have a cold, feel tired, or have low blood pressure, this porridge is a great choice.
Today is my second day of being sick—my body feels exhausted and I have no appetite, but I still tried to cook a little thin porridge to regain some strength. When you're tired, even chewing feels like too much effort, so just sipping spoonfuls of hot, gentle porridge can help you feel better.
I use partially milled brown rice with the bran still on, which provides B vitamins and is healthier than regular white rice. It's a good idea to keep some of this rice on hand for making porridge; you can store it in the fridge to prevent bugs, since high-quality rice without preservatives can spoil faster than regular rice.

Soak the rice in warm water for about 1 hour before cooking to help it soften faster, or lightly crush it. Since the rice still has its bran layer, it will be firmer than regular rice.

Add the rice to a pot and simmer until very soft. When the porridge is tender, add finely crushed ginger and cook together. Season with vegetarian fish sauce, salt, and vegetable bouillon to taste. Add a little leek or green onion for aroma. When serving, top with perilla leaves and a sprinkle of black pepper. This porridge helps you sweat and recover from a cold.

You can also use a little vegetable broth if you want a sweeter, richer porridge.
