Cut the tomatoes into chunks and slice the other ingredients into thin strips. Heat some oil in a pan, add the tomato chunks, sprinkle with a little salt, and sauté until soft and pulpy. The tomatoes provide the sour flavor—add more if you like it tangy.

Add the carrot strips and wood ear mushroom strips. Stir-fry until the carrots are just tender and turn translucent.

Pour in hot water. Once it comes back to a boil, add the bonito soup stock granules, enoki mushrooms (cut into sections), and napa cabbage (shredded). Cover and simmer on low heat for 15 minutes after it comes to a boil.

Add the squid balls (if using) and tofu cubes. Cover and simmer for another 5 minutes after it returns to a boil.

Taste and adjust the seasoning with more salt if needed. Add white pepper, then slowly drizzle in the beaten eggs while stirring to create egg ribbons. This soup is not thickened, but if you prefer a thicker texture, you can add a cornstarch slurry at this point.

When serving, add a splash of Chinese black vinegar to each bowl, then pour in the hot soup to release the aroma. Your easy homestyle hot and sour soup is ready!
