Ingredients

  • 4 cupsmedium-coarse semolina (about 640 grams)
  • 1 cupall-purpose flour (about 125 grams)
  • 1 cupmelted clarified butter (about 225 grams)
  • 1/2 cupvegetable oil (about 120 ml)
  • 1 cuporange blossom water (about 240 ml)
  • 2 tablespoonspowdered sugar
  • 2 teaspoonssalt
  • Almond extract
  • 250 grams(about 1 2/3 cups) roasted peanuts
  • 1 tablespoonground cinnamon
  • 1 tablespoonground cinnamon
  • 400 grams(about 1 1/3 cups) honey syrup

    In a large bowl, mix the semolina, flour, a pinch of salt, and sugar. Rub in the melted clarified butter and oil until well combined. Add orange blossom water gradually and mix until the dough comes together. Let the dough rest for at least 2 hours. After resting, sprinkle a little more orange blossom water and knead until the dough is soft and holds together.

    Meanwhile, prepare the filling by mixing the roasted peanuts (finely ground), almond flour, 1 tablespoon cinnamon, 1 tablespoon powdered sugar, and 1 tablespoon butter. Moisten the mixture with orange blossom water until it holds together. Roll out the dough into a long strip, spread the filling evenly, then shape into a log. Cut into pieces using a special mold or any triangular cutter.

    Fry the pieces in hot oil over medium heat until deep golden brown. Immediately after frying, pour cold honey syrup mixed with a little orange blossom water over them.
