Neera/Pathaneer is available during summer only. My home town 'Udangudi' from Tuticorin district is famous for making Karuppati/ Palm jaggery. Palm jaggery is made from Neera/Pathaneer. Neera is a sap extracted from the inflorescence of various spices of palms and used as a drink. Neera extraction is generally performed before sunrise. It's a sweet drink and translucent in colour.

Take all the needed ingredients. Soak raw rice around 2hrs. I am using red raw rice.

Add rinsed black eyed beans in a cooker,pour required amount of water and close the lid and wait for 3 to 4 whiste.

In a heavy bottom pan/vessel,pour Neera and start boiling. Keep boiling for 10more mins.

In the mean time, add soaked rice to the blender and grind smoothly. Then transfer the rice powder to another bowl and pour some water and mix it without lumps.

Now, it's been more than 10mts we cooked Neera. Now it's a time to add rice flour mixing. Add little by little to Neera without lumps. Lets cook again.

It takes 7 to 8 mts to cook. And neera started thickening. You can add more than 100g raw rice too. When we add more,the kheer becomes thickening more and more. When we reduce the amount of 100g rice,kheer would be watery. As per our desired taste,we can add.

Now add boiled black eyed beans. Mix it well. And keep cooking.

After a few mins add grated coconut and cardamom powder. And few mins later,turn off the stove and serve.

That's it. Neera naturally have sweetner like sugarcane. So not necessary to add sugar.
