Chana Masala

First soak the chana overnight in water; now boil it along with a potato and some salt as shown below in the image.

Now heat a pan, add 2 to 3 tbsp of mustard oil. You can use refined oil too. When the oil becomes hot, add a pinch of hing; add sabut jeera and kalounji, once it starts spluttering, add few curry leaves and slit green chillies to it. Now add grated onion and finely chopped garlic in it. Fry them by keeping the flame low.

Now add half chopped tomatoes and ginger-garlic paste in it. Mix everything well. Let it cook for about 5 minutes.

Now add the remaining half tomato (paste) and mix it. Now add all the dry masalas like coriander powder, cumin powder, red chilli powder including salt and a tsp of sugar. Combine everything well and cook the masala in a low flame for the next 7 minutes until oil starts releasing from the masala.

Then add some chopped coriander and give it a mix. Now add the boiled chana and potato mixture along with its boiled water as shown below. Crush the potato pieces with your hand while adding it to the masala.

Mix everything well with the masala. Add little turmeric powder. Check the salt consistency at this stage. Give it a mix. Now cover the pan and let it cook for about 12 minutes on a low flame.

After 12 minutes open the lid and sprinkle some garam masala and mix it. Add some more chopped coriander. Now switch off the flame. Your kala chana masala is now ready to serve. Serve it hot with some rotis or parathas.
