Kibbeh Nayyeh with Pomegranate Molasses and Lemon Juice 🍋🍋

Wash the bulgur several times and drain well, or soak it for 10 minutes.

Place the soaked bulgur in a mixing bowl with the grated onion, boiled potatoes, tomato paste, minced garlic, and sumac. Use a stand mixer or mix by hand.

Once the mixture is well combined, add black pepper, salt, olive oil, pomegranate molasses, parsley, and lemon juice. Knead by hand until the mixture holds together.

Shape the kibbeh as desired and serve with lettuce leaves and a yogurt cucumber salad.
